POKOTABI / Minogasa
みのがさ 神田和泉町店
Opening early from 6:00, Minogasa serves springy, thinly cut fresh soba made with Togakushi flour, paired with dashi-rich broth, signature geso-ten squid tempura, and curry sets.
01 / ABOUT THE PLACE
When the doors open at 6:00 in the morning, the gentle scent of dashi broth already fills Minogasa. The star here is fresh soba, crafted in their workshop using buckwheat flour sourced from Togakushi in Shinshu. Cut thin, the noodles deliver a pleasingly firm bite and a silky, effortless slurp, carrying plenty of broth blended from Hidaka kelp, bonito flakes, and an aged, sharp soy-sauce kaeshi base.
Among the extensive options on the ticket machine, the signature geso-ten soba is the bowl many diners come for. Packed with bite-sized morsels of squid tentacles, the chunky tempura can be submerged into hot broth to let its richness melt into the slender noodles, or enjoyed cold where the crunchy batter and chilled soba contrast beautifully. Bitter garland chrysanthemum (shungiku-ten), fragrant mixed-vegetable kakiage, and vivid pickled-ginger tempura (beni shoga-ten) provide plenty of reasons to mix things up on repeat visits.
For heartier appetites, the kitchen pairs its noodles with comforting options like a mini curry rice set featuring a nostalgic soba-shop-style curry, or a morning set rounded out with natto and raw egg. Counter seating forms the core of the compact interior, supplemented by standing spaces, and the ticket vending machine accepts transit IC cards. Operating continuously through the day on weekdays and weekends alike, it offers an easy, comforting pit stop whether for an early-morning breakfast or an off-peak lunch.
